Phat Mikes Hot Sauces
The caramelising of the onions, chillies and garlic at the start fo the process brings a sweetness to the sauce. The paprika gives a smokey undertone.
We wanted to pack more heat into this sauce, so we use scotch bonnets along with cayenne peppers. With the emphasis still being flavor we went for an Asian-inspired sauce. We use garlic, ginger, and fragrant lemongrass which again is caramelized at the start of the process to bring out the sweetness and flavour.
